Your say meatball, we say polpetta! The Italian name for meatballs is polpetta, and comes from the word pulp or flesh – polpa - in Italian. These tasty round balls date back to Roman times and a recipe for making them was even included in the first Roman recipe book. But meatballs don’t need to be limited to just beef, they can be created from various meats, fish, and even vegetables. Through the ages, polpette were made from leftovers, to give yesterday’s meal a new spin by adding some extra ingredients and frying it up to become a savory treat.

During your hands on cooking class in Florence, your English-speaking chef will show you the delights of round-shaped food. We have experimented with putting almost anything you can think of into this fun and delicious little round treat, creating delicious balls for any palate. We use fish, vegetables, grains, legumes, cheese, leftovers, ricotta, bread crumbs, eggplant, mint, carrots, nuts, fresh Swiss chard, and even chocolate (yes, dessert is in the form of a ball as well!). Techniques for cooking include: fried, oven-baked, boiled or in a sauce. Your chef will take you through the creation of an entire round meal, showing you that balls can be created and cooked in so many ways and there is no limit to your creativity. As always, the class ends with a wonderful sit down meal of prepared dishes that are simple and easy for you to recreate at home.
