Chicken Cacciatora (Hunter-Style) with Mashed Potatoes

What is Chicken Cacciatore?

Chicken Cacciatore, or "hunter's style" chicken, is a traditional Italian dish that combines braised chicken with tomatoes and onions creating a flavorful meal.

This hearty Italian dish is taught during MaMa Florence's Traditional Tuscan Cooking Classes!

Ingredients

For the chicken
•4 ties or drumstick of chicken
•2 cloves garlic, peeled and thinly sliced
•2 medium onions, peeled and thinly sliced
•1 glass of red wine
•1 tablespoon of tomato paste
•4 tablespoons of pureed peeled tomatoes
•1 bayleaf
•taggiasche (or black) olives as needed
•rosemary as needed
•sage as needed
•extra-virgin olive oil as needed
•salt as needed
•pepper as needed
•vegetable broth as needed

For the potatoes
•3 medium yellow paste potatoes
•4 tablespoons of extra-virgin olive oil
•aromatic herbs bouquet (rosemary, sage and laurel)
•salt as needed
•pepper as needed
•nutmeg as needed

Prepare the chicken


• Heat a large frying pan, and coat with olive oil.
• Once heated, add chicken and allow to brown in the pan. Then, remove from heat.
• In another medium-sized sauté pan, coat bottom with olive oil and heat. Add onions and garlic,
allow to brown for a few moments. Add your choice of aromatic herbs, olives and tomato paste
and browned chicken pieces. Adjust to taste with salt, add red wine and allow to evaporate.
• Add pureed peeled tomatoes and vegetable broth.
• Reduce heat and let simmer for 45 minutes covered with a lid. Remember to avoid fully sealing
the pan with lid to leave some space to let the sauce reduce.

Prepare the mashed potatoes

• Boil the potatoes (with the skin on) in a water pot.
• Once they’re cooked, heat up the extra-virgin olive oil in a pan on low heat and add herbs
bouquet and nutmeg. Let it infuse without frying for 5 minutes.
• Peel and smash the potatoes in a bowl. Dress with salt, pepper and infused olive oil.
