• 125g fresh basil leaves
• 25g whole almonds
• 25g pine-nuts
• 200 ml extra-virgin olive oil
• 50g freshly grated Parmesan
• 50g Pecorino Romano cheese
• 2 garlic cloves
• Salt to taste
• Black pepper, to taste
• Gently wash and dry basil, removing largest stems and stalks.
• Add all the ingredients in a mixer and mix well. Pesto should have creamy consistency.
• Place sauce into a small bowl, add some more extra virgin olive oil to avoid oxidation and allow to rest 15-20 minutes before using.
• When done cooking, drain well your chosen pasta and place into large bowl where you’ve placed the prepared pesto. Blend pasta and pesto well, place onto individual serving dishes.
• If desired, dust with freshly grated Parmesan cheese and serve immediately.
