What you'll learn in your Gluten free Cooking Class in florence
Naturally Gluten Free ingredients used in Italian Cooking
There are so many wonderful naturally gluten-free ingredients that we choose not to use industrially prepared premixed gluten-free flours or mixes. In the Gluten-Free Cooking Class, you will learn to prepare a variety of dishes using naturally gluten-free grains such as rice, millet, corn, amaranth, chik-peas, nuts, almnds and more. You'll create a full Tuscan menu, from appetizer to dessert, learning how to substitute these grains for regular ingredients to maintain a rich and varied gluten-free diet. The focus is on using natural ingredients rather than industrially prepared mixes, ensuring everything is made from scratch. Your chef will show you how to make everything you need for a scrumptious gluten-free meal from scratch!
Examples of Gluten-Free Traditional Dishes:
- Cecina: A savory chickpea flour flatbread from Tuscany.
- Pollo alla Cacciatora: Hunter's style chicken cooked with tomatoes, wine, and herbs.
- Gluten-Free Polpette: Delicious gluten-free meatballs.
- Gluten-Free Pasta: Learn to make pasta from scratch using gluten-free flours.
- Pappa al Pomodoro: A hearty Tuscan tomato and bread soup, made with gluten-free bread.
- Gelato: Authentic Italian ice cream made with fresh ingredients.
- Panna Cotta: A creamy, gluten-free Italian dessert.
Making Gluten Free Pasta
Creating gluten-free pasta involves a careful blend of gluten-free flours, such as rice, corn, or chickpea flour, combined with binding agents like xanthan gum or guar gum to mimic the elasticity of gluten. The dough is mixed with eggs and water until it reaches a smooth consistency. After resting, the dough is rolled out and cut into desired shapes, whether it's fettuccine, tagliatelle, or ravioli. The result is a delicious, chewy pasta that holds up well with a variety of sauces, bringing traditional Italian flavors to those with gluten sensitivities.
